Pennsylvania Vegetables in Season Right Now – Kale

Each week in June we see new veggies ripe for the picking being shared in abundance by all the Pennsylvania farmers of Instagram. Side note – thanks for using the #paveggies tag so we can continue to track all your hard work and stay in the know on how to support you. 😉

This week, we were most excited to see beautiful bunches of kale so that’s the PA veggie we’ll be focusing on today. You know the drill.

Time to invest in your local Pennsylvania produce sources and pick up fresh kale, then give some of these dishes a try:

Kale Stems Pesto

You’ll need:

  • 3 cloves garlic
  • 1 heaping cup kale, stems
  • Juice and zest of 1 lemon
  • 1 big handful parsley and/or basil
  • 1 pinch red pepper flakes
  • 1 generous pinch salt and pepper
  • 1/4 cup extra virgin olive oil
  • 1/2 cup walnuts or pine nuts, toasted
  • Grated Parmesan or pecorino cheese, optional
  • Drizzle of balsamic vinegar, optional

Kale Salad

You’ll need:

  • 6-8 large kale leaves with stems (or 6-8 cups loosely packed leaves without stems)
  • 1 tablespoon prepared mustard
  • 1 tablespoon of any variety vinegar
  • 2 tablespoons plain yogurt* (or mayonnaise**)
  • 1/3 cup olive oil
  • 1 teaspoon lemon juice
  • 1 tablespoon lemon zest (optional)
  • 1/4 cup grated, shredded or powdered Parmesan cheese***
  • 1 cup croutons, premade****

Quick & Easy Sauteed Kale

You’ll need:

  • 1 bunch of kale of any variety (approximately 5-6 C coarsely chopped)
  • 1 C diced sweet vidalia onion
  • 1 C low-sodium vegetable or chicken broth
  • 1 tsp garlic powder
  • 2 tsp olive oil or butter

Scrambled Eggs with Kale & Mozzarella

You’ll need:

  • 1 tablespoon extra virgin olive oil
  • 1/4 cup of chopped onion
  • Pinch of red pepper flakes
  • 1 ounce fresh kale, de-stemmed and thinly sliced (about 1 cup)
  • 4 eggs, beaten
  • 1/2 cup of grated mozzarella cheese
  • 1/2 teaspoon Italian seasoning (dried rosemary, oregano, thyme, basil)
  • Salt and freshly ground black pepper to taste

You’ll need:

A variety of common household ingredients, and kale for sure!

Braised Kale with Bacon and Onions

You’ll need:

  • 2 large bunches fresh kale (about 2 pounds)
  • 3-4 slices extra-thick-cut bacon, cut across into ¼-inch-wide julienne
  • 1 medium yellow onion, split lengthwise and thinly sliced
  • kosher or fine sea salt
  • freshly ground black pepper
  • splash of water

Kale Chips

You’ll need:

  • 1 cup bunch kale (or chard, spinach, or collards)
  • 1 1/2 tablespoons olive oil
